Ingredients:
- 6 cups bread flour
- 1 tsp yeast
- 2 Tbsp brown sugar
- 2 tsp salt
- 1 cup cocoa powder
- 3 cups warm water
- 1/2 cup chocolate chips
- 2 Tbsp collagen (optional)
- 1 Tbsp honey (for water bath)
Instructions:
- Add bread flour, yeast, salt, brown sugar, salt, cocoa powder and collagen (optional) in mixing bowl. Mix dry ingredients until combined.
- Add warm water to dry ingredients. You can use a stand mixer or mix by hand. Mix until the dough is sticky. This does not take long, only about 2 minutes.
- On lightly floured surface, knead dough and add in chocolate chips.
- Split dough into 8 even pieces. Roll into balls. Poke a hole into the middle of the dough, making into bagel shape.
- Let rise for 30 minutes on plate or lined baking sheet. Cover with a tea towel.
- Preheat oven to 375.
- At about 20 minutes into rising time, start boiling about 7-8 of water in pot. Once boiling, add honey. Once honey is dissolved, drop 1-2 bagels into the pot. Flip bagels after 15-30 seconds. When they are ready to be taken out, they will float to the top of the water. It can be difficult to see them as the water turns brown from chocolate chips, so keep a close eye on them. Place them on lined baking sheet about 1 1/2-2 inches away from each other. Continue until all bagels have had a water bath.
- Bake bagels in oven for about 25 minutes. Check bagels after about 22 minutes to make sure that they do not overcook.
- Transfer bagels from baking sheet to cooling rack. Let rest for an hour.
- Store for up to 3 days in storage bag.
