Blueberry Oatmeal Cookies

Ingredients:

  • 2 sticks (1 cup) of butter (I use salted, but unsalted is good too)
  • 1 1/2 cups brown sugar
  • 1/2 cup cane sugar
  • 2 large eggs
  • 1 Tbsp pure vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 cups oats (old-fashioned or quick oats)
  • 1 Tbsp ground cinnamon
  • 1 tsp salt
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1-2 cups of fresh blueberries

Instructions:

  1. Preheat oven to 350ºF.
  2. Soften butter slightly then combine in mixing bowl with brown sugar and cane sugar. Use stand mixer for 2-3 minutes, or whisk thoroughly by hand.
  3. Add eggs and pure vanilla extract and mix until fully incorporated.
  4. Add dry ingredients into mixing bowl. Flour, oats, ground cinnamon, salt, and baking soda.
  5. Fold blueberries into mixture very gently.
  6. Prepare baking sheet with parchment paper or silicone baking sheet. Use dough scoop to add evenly portioned amounts of dough on tray.
  7. Bake for 11-13 minutes. When they begin to brown on the edges to a golden brown, then they are ready. Let cool on tray for 5 minutes then move to a cooling rack. Continue until you run out of dough.
  8. Enjoy! Store for 3-4 days in an airtight container.
