
Ingredients:
- 2 sticks (1 cup) of butter (I use salted, but unsalted is good too)
- 1 1/2 cups brown sugar
- 1/2 cup cane sugar
- 2 large eggs
- 1 Tbsp pure vanilla extract
- 2 cups all-purpose flour
- 1 1/2 cups oats (old-fashioned or quick oats)
- 1 Tbsp ground cinnamon
- 1 tsp salt
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1-2 cups of fresh blueberries
Instructions:
- Preheat oven to 350ºF.
- Soften butter slightly then combine in mixing bowl with brown sugar and cane sugar. Use stand mixer for 2-3 minutes, or whisk thoroughly by hand.
- Add eggs and pure vanilla extract and mix until fully incorporated.
- Add dry ingredients into mixing bowl. Flour, oats, ground cinnamon, salt, and baking soda.
- Fold blueberries into mixture very gently.
- Prepare baking sheet with parchment paper or silicone baking sheet. Use dough scoop to add evenly portioned amounts of dough on tray.
- Bake for 11-13 minutes. When they begin to brown on the edges to a golden brown, then they are ready. Let cool on tray for 5 minutes then move to a cooling rack. Continue until you run out of dough.
- Enjoy! Store for 3-4 days in an airtight container.
