Garden Bruschetta

Garden Bruschetta

One of my favorite things to make from our garden tomatoes is bruschetta. I learned how to make it when I was about 12 years old and have loved it ever since. So, it is always exciting for me to eat tomatoes from our garden on the sourdough bread we make.

Ingredients:

  • 1-2 cups of tomatoes (diced canned tomatoes work too)
  • 1 1/2 Tbsp of olive oil
  • Salt and pepper to taste
  • 2 tsp of minced garlic (fresh is best)
  • Oregano (optional)

Instructions:

  1. Heat pan on 5-6 heat, and allow to warm for about 5 minutes.
  2. Add olive oil, warm for about 1-2 minutes.
  3. Add garlic, salt, and pepper. Cook until garlic is golden brown.
  4. Add tomatoes, cook down until tomatoes are soft and lightly browned.
  5. Serve and enjoy!
