Summer Produce

With the weird parasite going around, it is so nice to have a garden with fresh produce. I have had an abundance of banana peppers, this summer. Currently, I love to use them to make stuffed peppers. I just slice them lengthwise, clean out the seeds. Then I add cream cheese, cooked ground beef, and Colby jack cheese. Sometimes, I will also add sliced tomatoes over the top. I use a lined baking sheet and cook them for 15-17 minutes at 400°F. It tastes good alone or with sour cream. Definitely a summer favorite!
